Broccoli Roll
one cookie sheet buttered and cover with wax paper and butter it too.
ingredients
5 oz butter
1 medium onion (chopped)
2 cups steamed broccoli
1 cu flour
3/4 cup heavy whipping cream
4 eggs, separate egg whites/yolks and beat the egg whites until puffy and put aside
1/2 cup parmesan cheese
salt and pepper
In a large sauce pan melt butter and saute onions, add 1 cup of flour and cook until golden.
Remove from fire
Add heavy whipping cream
4 egg yolks
broccoli florets
season to taste
fold egg whites
add parmesan cheese
pour into prepared cookie sheet and bake at 350 ̊for about 45 minutes until golden brown
while the cookie sheet is in the over make the filling:
ingredients:
3/4 stick butter
1 medium onion chopped
3/4 cup flour
1 cup milk
1 1/2 cups steamed broccoli finely chopped
1 package cream cheese (Philadelphia)
3 egg whites beat well until they form white peaks and keep aside until needed

1/2 cup walnuts
salt and pepper
In a large sauce pan melt butter, saute chopped onions. Add flour and brown it a little bit . Turn the fire off and ad milk, incorporate until smooth, add broccoli, cheese and walnuts, incorporate all ingredients and season to taste. Fold in egg whites until they disappear into the mixture.
When the cookie sheet come out of the oven immediately invert over a clean kitchen towel peel wax paper and spread the filling over the cake, gently roll the cake w/the layer of filling and carefully transfer back to the backing sheet, if you need to wrap the roll on foil paper to make sure it keeps its form, place back in the oven for about 25-30 minutes, trim the edges as needed to fit the plate.
